Corn Cob Jelly - Delicious Taste Like Corn Honey - Steph’s Stove
Corn Cob Jelly
12 Corn Cobs (corn kernels removed)
8 cups of water (approximately) or enough to cover all the corn cobs
2 tablespoons lemon juice
1- package (1 ¾ ounces) Sure Jell Powdered Pectin
3 cups Sugar
Step 1 - Corn Juice
Put corn cobs in a pot of water and break in half if needed. .
Bring to a boil. Boil for 35-40 minutes.
Strain liquid through double cheesecloth.
Step 2 - Prepare the Jars
Prepare jelly jars, lids, and rings. Thoroughly wash, rinse, and place jars in a large stockpot or canning pot. The water should remain hot, but not boiling. Jars should remain in water heating until ready to be processed.
Step 3 - Jelly
Measure out 3 cups of strained liquid. Stir in the lemon juice and then the pectin; bring to a boil.
Add the sugar all at once, which will likely stop the boil. Bring back to a boil while stirring.
Boil for 5 minutes, stirring constantly. Remove from the heat.
Skim excess foam if needed.
Step 4 - Pack & Process Jars
Using a canning funnel, add hot jelly into hot jars, leaving 1/4” headspace.
Wipe the rims of each jar with a clean towel and place seal and ring.
Place all jars in the warm canner.
Return to a boil and process according to appropriate time for your location - my area is 10 minutes.
When a boil is reached that is when you'll start your timing. Process for the length of time appropriate for your altitude.
0-1,000 ft - 10 minutes
1,001-6,000 ft - 15 minutes
6,001+ - 20 minutes
After the processing time is complete, turn the heat off, remove jars, and allow them to rest for another 5 minutes. Then, place them a few inches apart on a thick towel to cool completely. Leave them alone for about 12 -24 hours.
After cooling completely, jelly will set up, and be shelf stable for up to 12 months. After opening, place in the refrigerator for 2-3 months. Enjoy!

    I use one part flour and one part cornmeal, with seasoned salt. I freeze mine on a cookie sheet before bagging so they don't stick together.

    Hi Stephanie. I am new to your channel. I am from Texas. Have you ever tried frying bite size pieces of russet potato, okra, zuccini and squash together in a cornmeal batter. You can buy the okra from the grocery store already frozen amd breaded for a short cut. The vegetables compliment each other and are so good. Season to taste with salt and pepper in your batter before frying. My mother use to make this, it was one of my favorites. I like your channel and especially giving create to your sweet neighbor and God for His blessings. Happy 4th of July! 😊

    Hey Steph the veggie farm I used to work at as a kid/teenager always washed their veggies b4 they took them to market to sell. Plus u shouldn’t b using dawn dish soap to wash veggies. Use a vinegar/water solution.

    Oh Steph you scare me. When you were cutting those hamhocks while holding them in your hand.............NO NO NO. Please don't do that. I have never bought hamhocks or knowingly eaten them. Your beans look good, so I will need to try them. I like green beans and pork, so this would be to my liking. Also you kitty must want attention.

    Use an electric knife and an angel food pan to stabilize the cob (you leave the stalk on when shucking). The kernels & milk will get caught in the pan. Much easier & no expense for extra equipment.

    Back in the late 60's, we relocated(military family) to Mineral Wells, Tx. One of the elderly residents at the Baker Hotel, made corncob jelly, she had a couple large gunny sacks of dried corncobs and like magic a few days later, I received a jar of jelly. Delish.Have not seen or even heard of it since then.

    My Gran used to make it with red field corncobs, & it reminded me of light apple jelly with a pink tinge. I use fresh, sweet corncobs, & when it is warm, it reminds me of honey. I just used my last jar from 2023, & need to get more corncobs to make some for 2024. Half pints make great gifts.

      You are right, when you use sweet corn cobs it does taste very similar to honey with a slight corn taste. I imagine the red field corn your Granny made was beautiful!       First, let me say, welcome to my channel! 🤗 To answer your question, the general rule is 8-12 months. However, you should always date your frozen food. Rotate them according to date and try to consume the older first to ensure a good rotation. This way all of your vegetables and fruits will be used in an appropriate time range. Always check to see they are sealed and they should be fine. I have used vegetables beyond this time frame that have been fine too. Mostly, it depends on how well the items were preserved and that there is no freezer burn. I hope this helps and you enjoy filling your freezer. There is nothing better than enjoying vegetables you have “put up” during the summer and having them all year long. Thanks for watching and welcome to my channel!     I really like your stories, and I have 2 that yours brought up in my memory. You leaving they candy on your furniture and it left a mark. I was probably 12 and was making popcorn with our popper which had a hand crank on the stove. Before I started mom told me NOT to set the hot popper on her new plastic tablecloth on the kitchen table. You guessed it, I did and it left a10" brown spot on it, she was mad. In the fall of 1976 I was 21 and working at a Sears store in Dayton Ohio. They had a candy counter, and sometimes durring my break I would go and buy just 4-5 pieces of this candy and eat it with my coffee. This brought back memories, thank you.

    Wouldn’t it be easier to coat the crackers if you put them directly into the sugar mixture? Stir gently to coat and then turn them out on the cookie sheet. Just a thought….

    May I suggest that next time it might be easier if you took the cream cheese out of its wrapper and softened it on a plate.
